And now for the main course of our Easter brunch… I decided to go all out and try this Swiss Rösti, which is basically a really fancy, giant hashbrown or latke. It wasn’t especially difficult, but does have a whole bunch of steps, which can be a little daunting! Without further ado, I’m just gonna jump right in…
The main ingredient is obvs, potatoes…

I knew that it would take me a little bit of time to get through the main dish I wanted to make for Easter brunch, so I prepared these little babies as appetizers – Eggs Cocotte! I’ve had and loved all kinds of baked eggs, but I’d never tried making them myself and let me tell ya, these are crazy easy to make!
You start out with a bit of spinach…

I have an obscene number of bloggie boos to get through – dinners and snacks and a magnificent s’mores pie! So until I can get my digital act together (and because I was so pumped to document my Easter brunch), here’s what I made today!
I figured what better way to commemorate Easter meals than to bring with the mint. I scoured a couple o’ Whole Foods and Safeway and the Korean natural foods market down the way, but without success – Practically everyone in this city is cooking with mint today! And of course, in a last ditch effort, I stumbled upon the most enticing bunch of fresh mint at the little produce stand, half a block from my house!
Got it home and set to making mint tea!

I know, I know… two food posts in a row! I made this breakfast ages ago and just never got around to posting it, so here goes!
To be right to the point, I had some left over bread from my lunch the day before (my standard: brioche w/ salami or some other delicious cured meat and brie) and didn’t want it to go to waste. So of course… french toast!

This Christmas, in lieu of showering people with expensive baubles and goodies, I cooked up a storm! And not just any kind o’ cookin’… I’m talking completely from scratch, homemade, I’ve been cooking for two days cookin’! The menu included:
Breakfast:
Homemade buttermilk blueberry pancakes (for which I successfully whipped egg whites by hand for the first time)
Warm blueberry compote
Crispy bacon
Irish coffee (mmm, Baileys and Whisky…)

Lunch:
We were too full, man!
Dinner:
Fresh slow-baked ham (I actually went to the butcher and purchased a big honkin’ slab o’ pig leg!!)
Butternut squash with quinoa (Spencer took care of this…)
Roasted brussels sprouts (and this one too!)
